Leeks Provençal
4 leeks
2tbs olive oil
2 Roma tomatoes
1/2 green pepper
12 black olives pitted
1/2 lemon juice and zest half a lemon
1tsp herbs de provence
Heat the oil in a large frying pan that has a fitted lid to a medium heat
Add the leeks and stir well.
Cover the pan, reduce the heat to low and cook gently for 10 minutes, stirring occasionally.
Add the remaining ingredients Cover the pan and cook for 15 minutes on a low heat
