Zippy Chicken Cranberry Walnut Salad

8oz cooked chicken chopped
1/4 cup chopped dried cranberries
1/4 cup walnuts
2 stalks celery
1/4 cup chopped spring or red onion
2 heaped tbs mayonnaise
1 tsp Dijon mustard
1 jalapeño chopped
1 Apple peeled and chopped
1/2 tsp curry powder
1 tsp lemon juice

Toast walnuts on stove top for 5 minutes on medium heat. Transfer to plate and chop and cool

Combine the ingredients and stir well

Serve on bread on bed of fresh lettuce
