Nutritious Summer Soup – Gazpacho
1/2 red Pepper chopped
1/2 Onion
1/2 Green Pepper
1 medium cucumber peeled and cubed
1 chilli pepper chopped
3 cloves of garlic minced
Pinch of Italian herbs
8 Campari tomatoes
3 cups organic tomato juice chilled
1 tbsp wine vinegar
2 tbsp olive oil
Salt and pepper to taste
Combine all the ingredients except the tomato juice in a bowl and allow to blend for an hour.
In a blender – I’m using a Vitamix Add the blended ingredients and half the tomato juice. Blend for 10 seconds on the lowest setting. This will bring everything together but keep it a little chunky. Pour back into the bowl then add back in about half of the vegetable mix to the blender. Add the rest of the tomato juice and blend well.
Refrigerate till needed.
This goes great with shrimp leftover from Chilli Lime Gatlic Shrimp
