Good and healthy chicken curry.
2 chicken breast chopped
2 cloves of crushed garlic
2 medium potatoes peeled and chopped
1/2 cups peas
1 can copped tomatoes
1/2 cup chicken broth
1 1/2tbsp curry powder
In a large pan fry the onions on a medium heat till translucent, adding the jalapeño after a couple of minutes.
Add the garlic and cook 1 minute longer. Turn to high heat.
Add the chicken and potato and cook till the chicken is completely cooked.
Stir in the curry powder and coat the mixture. Add the tomato and mix thoroughly. Cook till the tomatoes break down then add the broth and peas and cook for 15 minutes on medium – add more broth if needed
Serve over rice
