Healthy Baked (so good it’s almost like Fried) Chicken
If you’ve started a New Year healthy jag but crave some breaded chicken or simply want some tasty comfort food without the fried and unhealthy oils then try this simple recipe
1 chicken breast halved
1/2 tsp Cayenne Pepper
Salt and Pepper
Turn the oven on to 425 f to warm up Cutting the chicken breast rather than pounding it out keeps the chicken juicy. Put the flour salt and pepper and cayenne pepper in a ziploc. Add the chicken breast and get it we’ll coated.
Break the egg into a bowl and beat it and spread out the panko crumbs on a plate. Take the chicken shaking off excess flour and coat with the egg then coat with the Panko crumbs. Put on a baking sheet that has been spayed and cook for 20 minutes turning once. If you want to brown at the end simply broil for a couple of minutes.
Serve with lemon wedges
