Simple Easy Penne Amatriciana uses bacon as a simple alternative for this classic dish.
Simple Easy Penne Amatriciana
1 medium onion finely chopped
6 Roma tomato’s chopped
1 chilli
2 cloves garlic
1/2 tsp Mixed dried Italian herbs
1-2 cups chicken broth
3/4 lb bacon
2/3rd packet penne pasta
1 tbsp olive oil
1/2 tsp dried Italian herbs
Using a pair of Kitchen scissors Cut bacon rashers to small 1/2 inch wide pieces. Heat large frying pan and dry fry till bacon is golden. Take the bacon from the pan and drain off excess fat.
Put water and salt in saucepan for pasta and bring to the boil.
Let pan cool for 3 mins. Then add olive oil and heat up on medium heat. Add onion and fry till translucent. Add garlic and fry for 1 minute. Add chillis and cook for 2 mins. Add tomato and fry until they have “broken down”. Add Italian herbs salt and pepper and slowly stir in the broth. Add back the bacon. Bring to the boil and turn the heat to medium cooking on low roll. Add the penne to the saucepan. The sauce will cook down by 2/3rds in the time it takes the pasta to cook.
Drain pasta add to bowl with sauce.
