3 Parboiled potatoes

Quick Aioli – crush 3 cloves of garlic, 1/2 teaspoon cayenne pepper with 2 tablespoons of mayonnaise. Mix well and refrigerate till needed.
Heat olive oil in a skillet till hot Add the potatoes, season with salt and pepper and cook until golden brown on all sides. Remove the potatoes to a paper towel-lined plate for a moment to drain the excess oil. Put the potatoes on a cooking sheet and bake until crisp, about 10 minutes. Remove the sheet and season the potatoes with a bit more salt. Transfer to plate and serve with some of the aioli. Serve hot.
