Bruschetta

6 or 7 ripe tomatoes (about 1 1/2 lbs)
6 cloves garlic, minced (about 2 teaspoons
1 tbsp olives chopped
2 tsp extra virgin olive oil + 2 tbsp olive oil
1 teaspoon balsamic vinegar
3 fresh basil leaves, thinly cut
1 teaspoon kosher salt, more or less to taste
1/2 teaspoon freshly ground black pepper
1 boule bread or baguette
2 tbsp grated Parmesan
1/4 cup (60 ml) olive oil

Mix tomatoes, olives, basil, salt, oil 1/3rd of garlic and vinegar. Allow to blend for 30 minutes

Mix Olive oil and two thirds of garlic

Slice bread and place on baking sheet. Coat with garlic and olive oil mixture and toast till golden.

Add cheese to vegetable mixture and coat bread and serve
