Mix together:
1/2 Cucumber peeled and diced
6 Campari tomatoes or 4 Roma
3 cloves garlic – crushed
9 pitted Greek olives (black) quartered
1 green pepper chopped
3 spring onion or 1/2 red onion
1 jalapeño pepper chopped
1 tbsp peperoncini chopped
4oz feta cheese cubed
Dressing
In a clean jar add:
1/2 teaspoon dried oregano
1/2 lemon juiced
4tbs Olive Oil
shake well – taste and adjust as required
Pour over salad stir
