Baked Potato Salad
2 pounds russet potatoes , about 6 medium-size
1 cup sour cream
1 cup mayonnaise
8 slices bacon , cooked and chopped
5 green onions or chives , chopped
1 cup shredded cheddar cheese
salt and freshly ground black pepper , to taste
Oven bake the potatoes and when cooked allow to cool.
When cool chop into 3/4- inch pieces and combine with remaining ingredients.
