Healthy Shepherds Pie

Healthy Shepherds Pie – traditional staple of local pubs. By using low fat beef and broth the dish maintains a light and healthy balance while still being a great comfort food.

Healthy Sheperds Pie

1 tbsp olive oil
1 medium onion
1lb of organic beef – 8oz fat oe less preferred – try Amazon Fresh
4 medium potatoes
Lea & Perrins – Worcestershire Sauce
2 cups organic chicken broth
1 cup frozen peas or mixed veg
1/2 tsp mixed herbs
Salt and pepper to taste

Peel potatoes and add to a pan of salted boiling water and cook till done

Chop onions to medium pieces and fry till nearly clear on medium heat. Turn heat to high and add meat and cook till browned and done. Add herbs, seasoning, chicken broth and Lea & Perrins.

Bring to boil. I usually cook the peas in with meat so cook till peas are done and broth has reduced to be lavel with the meat.

Mash the cooked potatoes

Add meat to an 9×9 cooking dish and cover with mash potatoes and dot with butter

Brown under grill

Serve and enjoy
